Instructions
1-First, prepare the tzatziki sauce as outlined in the recipe. In a food processor, chop the 2 cloves garlic, 1 peeled, quartered, and seeded cucumber, and 2 tablespoons fresh dill. Add the 1 cup plain Greek yogurt, Β½ cup sour cream, 1 tablespoon lemon juice, 1 tablespoon olive oil, and Kosher salt to taste; pulse to blend. Refrigerate for one hour before using to let the flavors meld.
2-Next, preheat your oven to 450 degrees F. Place the 4 pieces of Greek flatbread or pita breads domed side down on a parchment-lined baking sheet. Evenly spread 1-2 tablespoons of the tzatziki sauce on each pita for a creamy base.
3-Then, top each pita with β to Β½ cup shredded mozzarella cheese per pita. Layer on the 1 cup shredded chicken breast, Β½ cup sliced Kalamata olives, β cup sliced sun-dried tomatoes, and 1 cup quartered artichoke hearts over the cheese. This step adds layers of texture and taste that make the pizza stand out.
4-Sprinkle with the β cup feta cheese, oregano to taste, and Kosher salt to taste. Bake for 10-12 minutes until the cheese melts and the feta starts to brown. Once done, remove from the oven and garnish with fresh dill and red chili pepper flakes as desired. Let it cool for a minute, cut into quarters, and serve warm.
