  • Total Time: 45 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

3 to 6 large Russet potatoes peeled and sliced about 1/2 inch thick

12 quarts water for parboiling

1 teaspoon salt for parboiling

1/4 cup olive oil for seasoning mixture

2 teaspoons salt for seasoning mixture

Pepper to taste for seasoning mixture

1/2 teaspoon garlic powder for seasoning mixture

2 teaspoons rosemary for seasoning mixture

1/2 teaspoon paprika for seasoning mixture

Fresh Parmesan cheese to taste optional sprinkled on top before serving

Instructions

1-Getting started with this recipe is straightforward and fun, especially if you’re new to the kitchen. Begin by preheating your oven to 400Β°F (205Β°C) to set the stage for crispy results. Then, peel and slice 3 to 6 large Russet potatoes about 1/2 inch thick, which gives them the perfect texture for shaping.

2-Next, parboil the potato slices in 1-2 quarts of water mixed with 1 teaspoon salt for 3-4 minutes. This step helps achieve that tender inside with a crunchy outside. After parboiling, cool the slices with cold water and use a small metal cookie cutter to cut out heart shapes, reserving any scraps for other uses like mashed potatoes.

3-Now, prepare the seasoning mixture by combining 1/4 cup olive oil, 2 teaspoons salt, pepper to taste, 1/2 teaspoon garlic powder, 2 teaspoons rosemary, and 1/2 teaspoon paprika in a bowl. Toss the potato hearts in this mixture and let them marinate for about 5 minutes to soak up the flavors. Arrange them on a baking sheet and roast for 22-25 minutes, flipping halfway through for even cooking.

4-For that golden finish, broil the potatoes for an additional 5 minutes after roasting. Once done, sprinkle with fresh Parmesan cheese if desired and serve warm. The whole process takes around 45 minutes, serving up to 8 people with a festive twist.

Notes

πŸ’‘ Use a sharp heart-shaped cookie cutter for clean cuts and uniform shapes.
πŸ•’ Do not overboil the potatoes to prevent them from becoming too soft to hold shape.
πŸ”₯ Broil at the end for extra crispiness but watch carefully to avoid burning.
