2 eggs (room temperature)
2 cups flour
2 teaspoons baking powder
1 cup milk
¼ cup plain Greek yogurt
2 tablespoons vanilla extract

Instructions
1-Preheat and Prep: Heat oven to 375°F. Line muffin pan with liners.
2-Dry Mix: Whisk 2 cups flour and 2 tsp baking powder. Set aside.
3-Cream Wet Base: Beat 4 tbsp room-temp butter and 1 cup sugar until fluffy, about 2 minutes.
4-Add Eggs and More: Beat in 2 room-temp eggs until combined. Mix in ¼ cup Greek yogurt and 2 tbsp vanilla extract.
5-Combine Gently: On low speed, add half flour mix and half 1 cup milk. Mix just until combined, then repeat. Avoid overmixing for light texture.
6-Fold Sprinkles: Stir in ¾ cup sprinkles with spatula.
7-Fill and Bake: Fill cups ¾ full. Bake 18-20 minutes until toothpick clean.
8-Cool: Cool in pan briefly, then on rack completely. Store airtight.
