🌯 Vegan Burrito Recipes offer a delicious combination of fresh ingredients and bold flavors, perfect for a satisfying plant-based meal.
🥑 These burritos are packed with nutrient-rich fillings and can be customized for a quick, tasty lunch or dinner option.

  • Total Time: 1 hour
  • Yield: 6 burritos

Ingredients

– 6 large soft flour tortillas

– 1 ½ cups cooked Spanish rice

– 1 ½ cups cooked black beans

– Juice of 1 fresh lime

– 1 tablespoon taco seasoning

– 1 tablespoon extra-virgin olive oil (plus additional for cooking)

– 1 large red bell pepper, sliced

– 2 cups fresh spinach leaves

– ½ cup guacamole or 1 medium avocado sliced

– ½ cup pickled red onions

– ¼ cup fresh cilantro, chopped

– 1-2 thinly sliced jalapeños (to taste)

– Salt and pepper to taste

Instructions

1-First: mix the black beans with lime juice, taco seasoning, 1 tablespoon of olive oil, and salt, then let them marinate to soak up all those tasty flavors.

2-Next: heat some olive oil in a pan and cook the sliced red bell pepper until it’s charred and soft, adding that smoky touch that makes every bite special.

3-Once your ingredients are ready, lay out the flour tortillas and evenly distribute a layer of fresh spinach, cooked Spanish rice, seasoned black beans, and charred red peppers on each one.

4-Top everything with guacamole or avocado slices, pickled red onions, chopped cilantro, and jalapeño slices to bring in that fresh, bold kick.

5-Finally, fold in the sides of the tortilla, tuck the bottom flap, and roll it tightly to keep the filling secure, then slice in half if you want to serve it up nicely.

Notes

🌿 Prepare beans, rice, and peppers ahead and store refrigerated for up to three days to save time.
🥑 Use homemade or store-bought guacamole based on preference.
❄️ For freezing, omit avocado and substitute spinach for delicate greens; wrap tightly in foil and freeze up to three months.
