Ingredients

– 6-8 cups chopped watermelon Provides the base sweetness and juiciness

– 1 box low-sugar pectin Helps thicken the preserves

Instructions

1-First, prepare your ingredients by chopping 6-8 cups of watermelon and removing the rind. This sets the base for your fresh watermelon lime jelly recipe.

2-Next, purรฉe the watermelon in a blender until smooth, then strain it through a cheesecloth-lined fine mesh sieve to get exactly 4 cups of juice.

3-Once you have your juice, combine it with 1/2 cup bottled lime juice and 1 box of low-sugar pectin in a saucepan. Bring this mixture to a boil while whisking constantly to dissolve the pectin fully.

4-After boiling for 1 minute, add 2-3 cups of sugar and return to a full rolling boil for another minute.

5-Now, ladle the hot mixture into prepared jars, leaving 1/4-inch headspace, and wipe the rims clean before sealing. Let the jars stand undisturbed for 12-48 hours to set.

6-For long-term storage, process them in a hot water bath canner for 10 minutes, or 15 if youโ€™re above 6,000 feet elevation.
