– 1 minced garlic clove during blending
– 1 tablespoon fresh herbs like dill or oregano for extra zing
Instructions
1-Gather and Prep: Drain the 8 ounces of block feta cheese. Zest 1 lemon. Have 3/4 cup plain whole milk Greek yogurt and 2 tablespoons extra virgin olive oil ready. Optionally mince 1 garlic clove for that aromatic kick.
2-Blend Base: Add feta, yogurt, lemon zest, and garlic to a food processor. Pulse until combined.
3-Incorporate Oil: With the processor running, slowly drizzle in the 2 tablespoons olive oil. Blend until smooth and whipped, about 1-2 minutes.
4-Check Texture: Scrape sides as needed. It should be light and fluffy.
5-Plate It Up: Transfer to a serving plate. Smooth the top and create a well in the center.
6-Add Toppings: Drizzle with extra olive oil. Sprinkle 1 teaspoon Aleppo pepper or red pepper flakes, 2 tablespoons each chopped mint and parsley. Scatter 2-3 tablespoons toasted pine nuts and 1-2 tablespoons crushed pistachios if using.
7-Serve: Enjoy right away with pita chips or wedges for peak fluffiness.
