Instructions

1- Whipping up white bean and ham soup is straightforward and fun, especially on busy weeknights when you need something hearty without much effort. Start by rinsing and soaking white beans overnight if you’re using dried ones, or grab canned beans for a quicker option drain and set them aside to save time.

2- In a large pot, heat the olive oil over medium heat and add the onion, carrot, and celery; sauté for 7-10 minutes until they soften and release their flavors. Stir in the minced garlic and cook for another 30 seconds to build that aromatic base without burning it.

3- Next, sprinkle in the Italian seasoning and smoked paprika, stirring to mix everything evenly. Pour in the chicken broth and water, then add the diced ham and drained beans. Bring the pot to a boil, reduce the heat, and let it simmer for 20-25 minutes until the flavors meld together beautifully. Finally, season with salt and pepper to taste, and for a thicker soup, mash some beans against the side of the pot and stir them back in.
